Tang Er Duo, a typical snack in Beijing, is named after its shape looks like human ear. It is an Islamic snack, made of sugar and flour. Tang Er Duo is bright and soft as well as sweet. 
  
  How to cook it? 
  Ingredient: flour, brown sugar, soda, fermented flour 
  Preparation: 
  Place soda in fermented flour and beat. 
  Mix brown sugar with the other fermented flour and beat. 
  Cut the fermented flour into two pieces. 
  Roll out one part of fermented four with rolling pin. 
  Place the sugar flour mixture between two pieces of fermented flour. 
  Cut a 5cm piece and press one end hard and roll over to the other end. 
  Cut square of 40g. 
  Turn over the thin and thick end over respectively in ear shape. 
  Boil peanut oil and fry the cakes. 
  Take out the cakes while they appear golden on the skin and have oil dripped. 
  Place cakes in warm malt sugar in a minute and then in honey completely. 
  Cool in the platter.   
  蜜麻花是北京小吃中常见名品,又称糖耳朵,因为它成形后形状似人的耳朵得名。前人有诗说:"耳朵竟堪作食耶?常偕伴侣蜜麻花,劳声借问谁家好,遥指前边某二巴》。"并注说:"糖耳朵蜜麻花,为清真教人所制食品,其原料不外砂糖面粉及小糖等,小糖即俗称之稀也。" 
   前人已将蜜麻花的原料讲得很清楚了。不过它用的面要用和好的发酵面对上碱,另用一块面和上红糖,做时将发酵面分两块,一块擀开后,将红糖和的面铺是上, 再擀另一块发酵面,铺在红糖面上面,这样成了二层酵面,一层糖面。用刀切下5厘米左右的长条,将长条一边摁薄,成坡形,把薄边和厚边合到一起,再切成重 40克左右的小块。自小块中间开一刀口,然后打开,将薄的一面往里翻过去,厚的一边一折,就成了耳朵形的坯子了。花生油烧五成热,分批将坯子入油里炸过, 呈金黄色时捞出,沥尽油,趁热放入温热的饴糖中泡一分钟,称过蜜,浸透后,捞在盘里晾凉就成了。要注意必须炸透,否则就会因炸不透,蜜也浸不透的质量不佳 现象。 
  蜜麻花棕黄油亮,质地绵润松软,甜蜜可口。南城的南来顺饭庄的蜜麻花由于常年制作。质量稳定,主要是放碱合适,没有酸口,炸得透,吃蜜均匀,达到了松软绵润的质量要求,1997年被评为"北京名小吃"和"中华名小吃"。
