Introduction:

北京小吃中奶油炸糕是富有营养的小吃品种。它用上好面粉为原料,先烧适量开水,水开后,改用小火,将面粉倒人锅内,迅速搅拌直到面团由白变成灰白色,不 粘手时,取出稍晾成烫面。白糖用水化开,香草粉用水化开,适量鸡蛋液在碗内搅匀,分几次加入烫面中,最后一次加入奶油、糖水、香草粉水,揉搓均匀。
锅内倒花生油或生菜油,也可用牛油。但不宜用豆油或芝麻油,因为后两种油容易抵消奶油味,旺火烧至冒烟后,改用小火,此时将揉匀搅拌好的面团,500克分成40个均匀小球,入油锅前用手摁成圆饼,逐个下入油中,待饼膨起如球状,并呈金黄色时捞出,滚上白糖即成。
奶油炸糕呈圆形,外焦里嫩,香味浓郁,富有营养,易于消化。
